Ingredients
- 110 g Red Fife Multi-Purpose Flour
- 1 tbsp baking powder
- 25 g brown sugar
- 1/8 tsp salt
- 1/2 cup (approximately 114g) sourdough discard
- 1 tbsp melted coconut oil
- 1/2 cup (120g) warm milk of your choice
- 1/3 cup applesauce
Step One
Heat a non-stick skillet to medium heat.
Step Two
Whisk dry ingredients together in a small bowl.
Step Three
In a larger bowl, whisk together the wet ingredients until combined.
Step Four
Gently fold the dry ingredients into the wet ingredients until no dry clumps remain. It will be thick! Let it stand for a couple of minutes to develop some bubbles.
Step Five
Melt some butter on the pan and use 1/4 cup scoop to portion the batter onto it. Cook until you see bubbles in the center. Gently flip but do not pat down! Let them cook for another couple of minutes until the bottom is golden brown.
Step Six
Serve warm with maple syrup, fruit, or whatever you prefer.
Makes approximately 6-8 small/medium pancakes!
