All-Purpose Red Fife is our most versatile flour and the easiest way to start baking with freshly milled whole grain flour. It substitutes 1:1 with conventional all-purpose flour in almost every recipe and makes noticeably better muffins, cookies, cakes, and breads from the very first bake.

What makes it different
Red Fife is Canada's oldest wheat variety, predating modern hybridized wheat by well over a century. It has never been selectively bred for industrial processing. The result is a naturally different gluten structure, strong enough for bread but with slower gluten development that makes it far more forgiving. Muffins stay tender. Cookies bake with real flavour. Cakes do not go dense.
We stone mill it slowly on our Austrian Osttiroler mill and lightly sift it to remove only the larger bran particles. The germ, most of the bran, and all of the natural nutrition stay intact. No bleach. No synthetic vitamins. No additives of any kind. Nothing was stripped so nothing needed to be added back.
Many people who have struggled with conventional flour find Red Fife is the flour that changes things for them. It is not gluten-free, but it is a fundamentally different grain from modern wheat and for many people that difference is very noticeable.
No synthetic folic acid. No added iron. Ever.
Our flour is never enriched. The natural folate in the wheat germ is intact exactly where it always was. For people paying attention to synthetic folic acid in their food, whether due to MTHFR gene variants or simply a preference for food that has not been chemically altered, our flour contains none. We think that is worth knowing.
Storage
Store in the fridge or freezer to preserve freshness. Freshly milled flour absorbs more water than conventional flour so you may need slightly more hydration in your recipes. Learn how to store your freshly milled flour.
