Whole Grain Red Fife Flour is milled from the entire Red Fife kernel on our Austrian Osttiroler stone mill. Bran, germ, and endosperm all ground together. Nothing removed, nothing added. The result is a deeply flavourful, hearty flour with all the natural nutrition of the whole grain fully intact.
Red Fife is Canada's oldest wheat variety, predating modern hybridized wheat by well over a century. It has never been selectively bred for industrial processing. The gluten structure is naturally softer and slower to develop than modern hard wheat, which means baked goods that are tender rather than dense, and a flavour that is genuinely richer and more complex. Earthy, slightly nutty, with a depth that refined flour simply cannot replicate.
Many people who find conventional wheat difficult to tolerate report sitting much better with heritage grains like Red Fife. This is not a gluten-free flour, but it is a fundamentally different grain from modern wheat and for many people that difference is very noticeable.

Our flour is never enriched. The natural folate in the wheat germ is intact exactly where it always was. For people paying attention to synthetic folic acid in their food, whether due to MTHFR gene variants or simply a preference for food that has not been chemically altered, our flour contains none.
Storage
Store in the fridge or freezer to preserve freshness. Freshly milled whole grain flour absorbs more water than conventional flour so you may need slightly more hydration in your recipes. Learn how to store your freshly milled flour.
