Better Basics Wheat Berry Salad

I use this salad recipe on Sundays to do my weekly fridge clean out weekly. It's delicious, nutritious and easy! You can add as little or as many veg as you desire. You CAN NOT mess this up. Enjoy!


Ingredients
- 2 cup wheat berries
- 1 bunch of fresh dill
- Red onion thinly sliced
- Cucumber
- Tomato
- Sweet peppers
- Celery
- Feta (if desired)

 

    Step 1
    Bring a pot of water to a boil.

    Step 2
    Rinse the wheat berries and add to the pot.

    Step 3
    Reduce the heat and simmer, uncovered, 45 to 90 minutes or until tender. Add more water if necessary. Drain and cool.

    Step 4
    Chop veggies and dill finely.

    Step 5
    Mix with wheat berries and drizzle generously with olive oil, salt & pepper and the juice of 1 lemon.

    This salad can be eaten right away or be kept in the fridge for a week! The longer it sits the better it tastes.
