Why Better Bread Flour
Made from certified organic hard red spring wheat grown in Laura, Saskatchewan by Will Robins on Maida Vale Farm. Stone milled slowly on our Austrian Osttiroler mill and lightly sifted to remove only the larger bran particles. The result is a silky, high-protein flour with real flavour, real nutrition, and nothing added.
At 13.5% protein, this flour has the gluten strength your sourdough needs to trap CO2, hold its shape, and give you that open crumb and oven spring. It is also our go-to for yeasted loaves, pizza dough, focaccia, fresh pasta, cinnamon buns, and anything where gluten structure matters.
No bleach. No synthetic folic acid. No added iron. No additives of any kind. Tested and certified glyphosate free. Nothing was stripped so nothing needed to be added back.
