What makes it different

Most pancake mixes are made with refined flour, synthetic vitamins, and a list of additives you would never choose yourself. Ours starts with organic Red Fife heritage grain, stone milled fresh, and nothing stripped out. No bleach. No synthetic vitamins. No fake enrichment. Just real ingredients that actually make sense in a pancake.

Red Fife is Canada's oldest wheat variety, predating modern hybridized wheat by well over a century. It has never been selectively bred for industrial processing, which means a naturally different grain that many people find sits much better with them than conventional flour does.

No synthetic folic acid. No added iron. Ever.

Our flour is never enriched. That means no synthetic folic acid and no added iron are ever introduced into our flour. Conventional pancake mixes are made with enriched flour that has had these added back after milling. We do not strip the grain in the first place, so nothing needs to be replaced. The natural folate that exists in the wheat germ is still intact, exactly where it always was.

For the growing number of people paying attention to synthetic folic acid in their food, whether due to MTHFR gene variants or simply a preference for food that has not been chemically altered, our mix contains none. We think that is worth knowing.
