No Rise- Cinnamon Roll Muffins

This simple twist on cinnamon buns, in muffin form, is an easy way to get that instant gratification of a cinnamon bun with less time. Let's be honest: the middle of the bun is the best part, anyway!

Ingredients

Dough
-4 tbsp butter, melted
-1/3 cup cane sugar
-1 egg
-1 cup milk (or plant-based milk)
-3 3/4 cup Red Fife Multipurpose Flour
-1 tsp baking soda
- 1 tsp salt

Filling
-1 cup brown sugar
-2 tsp cinnamon
-4 tbsp butter, melted

Glaze
-1 cup powdered sugar
-2 tbsp milk

Directions

  1. Preheat your oven to 350° F and prepare your muffin pan with liners.
  2. Mix the melted butter, brown sugar, and cinnamon in a small bowl and set aside to make your filling.
  3. To make your dough, add melted butter, cane sugar, and egg to your stand mixer, using the whisk attachment to combine. Beat for 1-2 min on medium speed.
  4. Add 1 cup of milk and whisk together.
  5. Replace the whisk with a dough hook, and then add 2 cups of flour, baking soda, and salt to your bowl. Use the hook on low-medium speed to combine.
  6. Slowly add the remaining flour until the dough pulls away from the bowl's sides and forms a ball.
  7. Sprinkle 1/4 cup of flour on a clean surface and knead it into the dough.
  8. Using a rolling pin, roll out into a large rectangle that is 1/4'' thick.

  9. Spread the filling over the dough.
  10. Roll Dough length wise into a log.
  11. Cut dough into 1.5'' sections with a knife.
  12. place each section into your prepared muffin pan.
  13. Bake muffins in preheated oven at 350°F for 15-17 mins or until muffins rise slightly and are golden on the top.
  14. Remove muffins from oven and let cool slightly before removing them from the baking pan. Once cooled, drizzle your glaze on top!
