This simple twist on cinnamon buns, in muffin form, is an easy way to get that instant gratification of a cinnamon bun with less time. Let's be honest: the middle of the bun is the best part, anyway!
Ingredients
Dough
-4 tbsp butter, melted
-1/3 cup cane sugar
-1 egg
-1 cup milk (or plant-based milk)
-3 3/4 cup Red Fife Multipurpose Flour
-1 tsp baking soda
- 1 tsp salt
Filling
-1 cup brown sugar
-2 tsp cinnamon
-4 tbsp butter, melted
Glaze
-1 cup powdered sugar
-2 tbsp milk
Directions
- Preheat your oven to 350° F and prepare your muffin pan with liners.
- Mix the melted butter, brown sugar, and cinnamon in a small bowl and set aside to make your filling.
- To make your dough, add melted butter, cane sugar, and egg to your stand mixer, using the whisk attachment to combine. Beat for 1-2 min on medium speed.
- Add 1 cup of milk and whisk together.
- Replace the whisk with a dough hook, and then add 2 cups of flour, baking soda, and salt to your bowl. Use the hook on low-medium speed to combine.
- Slowly add the remaining flour until the dough pulls away from the bowl's sides and forms a ball.
- Sprinkle 1/4 cup of flour on a clean surface and knead it into the dough.

Using a rolling pin, roll out into a large rectangle that is 1/4'' thick.
- Spread the filling over the dough.
- Roll Dough length wise into a log.
- Cut dough into 1.5'' sections with a knife.
- place each section into your prepared muffin pan.
- Bake muffins in preheated oven at 350°F for 15-17 mins or until muffins rise slightly and are golden on the top.
- Remove muffins from oven and let cool slightly before removing them from the baking pan. Once cooled, drizzle your glaze on top!
