After years of requests, I finally got myself a bread maker and have been testing out all the recipes. I've landed on the sandwich bread after endless tests for texture, sweetness and the perfect rise.
Place ingredients in order in your bread maker
-1.5 cups warm water
-1/3 cup olive oil
-3 tbsp honey
-1 egg
-2 tsp kosher salt
-4.5 cups Better Bread Flour
-2 tsp yeast instant yeast or active dry yeast
Bread Machine Settings- you can use quick bread setting but I find sometimes the rise gets to high. So I've been using a custom settings on you bread machine. Choose cycle custom which is #15 on my machine found here and follow the prompts below.
Settings
1. Cycle-Custom
2. Stir 1-15min
3. Rest 1- 3 min
4. Stir 2- 5min
5. Rest 2- 3min
6. Stir 3- 10 min
7. Ferment 1- 0 min
8. Ferment 2- 0 min
9. Ferment 3- 45 min
10. Bake- 55 min
11. Keep Warm ( this is usually set at 60 min)
-Once your bread is baked, take out of your machine and invert onto cooling rack.
-Store, in a bread box, bread bag or well wrapped on the counter for 4 days, or freeze for up to 3 months.
Additions
For a cinnamon raisin bread, increase your honey to 1/4 cup, add 1.5 tsp cinnamon and 1 cup or raisins to your dough.
