Makes: 4-6 pop tarts
Ingredients:
Pastry:
- 2 cups better bread flour
- 1 tbsp coconut sugar (or regular sugar)
- ½ tsp fine sea salt
- 1 cup cold unsalted butter, cubed
- 1 large egg
- 2-4 tbsp ice water
Filling:
- ½ cup coconut sugar
- 1½ tsp ground cinnamon
- 1 tbsp flour (to thicken)
- 2 tbsp softened butter
Topping:
- 1 egg, beaten (egg wash)
- Optional glaze: powdered sugar + milk or cream + vanilla
Instructions:
- In a bowl, whisk flour, sugar, and salt. Cut in butter until crumbly. Add egg and ice water, mixing just until dough holds together.
- Divide in half, flatten into disks, wrap, and chill 30 minutes.
- Mix filling ingredients until paste-like.
- Roll one disk into a rectangle, cut into 6 equal pieces. Repeat with second disk.
- Spread filling onto half the rectangles, leaving a ½-inch border. Top with remaining rectangles, press edges, and crimp with a fork.
- Brush with egg wash. Bake at 375°F for 22-25 min until golden.
- Cool slightly before glazing (optional).
