Nostalgic Cinnamon Poptarts
Makes: 4-6 pop tarts

Ingredients:

Pastry:
  • 2 cups better bread flour
  • 1 tbsp coconut sugar (or regular sugar)
  • ½ tsp fine sea salt
  • 1 cup cold unsalted butter, cubed
  • 1 large egg
  • 2-4 tbsp ice water
Filling:
  • ½ cup coconut sugar
  • 1½ tsp ground cinnamon
  • 1 tbsp flour (to thicken)
  • 2 tbsp softened butter
Topping:
  • 1 egg, beaten (egg wash)
  • Optional glaze: powdered sugar + milk or cream + vanilla

Instructions:

  1. In a bowl, whisk flour, sugar, and salt. Cut in butter until crumbly. Add egg and ice water, mixing just until dough holds together.
  2. Divide in half, flatten into disks, wrap, and chill 30 minutes.
  3. Mix filling ingredients until paste-like.
  4. Roll one disk into a rectangle, cut into 6 equal pieces. Repeat with second disk.
  5. Spread filling onto half the rectangles, leaving a ½-inch border. Top with remaining rectangles, press edges, and crimp with a fork.
  6. Brush with egg wash. Bake at 375°F for 22-25 min until golden.
  7. Cool slightly before glazing (optional).
