Ingredients
- 1 1/2 cups Red Fife Multipurpose Flour
- 1 tsp baking soda
- 1/4 tsp sea salt
- 3/4 tsp ground cinnamon
- 3 medium overripe bananas, 1 1/2 cups mashed
- 8 tbsp butter, melted and cooled
- 3/4 cup light brown sugar
- 2 large eggs at room temperature
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips (can be omitted)
Directions
- Preheat oven to 350°F.
- Line your 8 1/2'' x 4 1/2'' loaf pan with parchment paper or grease with butter.
- Whisk the flour, baking soda, salt and cinnamon together and set aside.
- Use a fork to mash the bananas into a paste in a large bowl.
- Whisk the melted butter, brown sugar, eggs and vanilla into the banana until well blended.
- Using a rubber spatula, scrape the sides and bottom of the bowl. Add the dry ingredients, stirring the batter gently until the flour disappears.
- Gently fold in chocolate chips.
- Pour batter into prepared loaf up to 3/4 full.

Bake for 55 to 60 minutes at 350°F or until you can insert a thin knife or toothpick into the middle of your bread, and it comes out clean. You can also use a thermometer to check that the internal temperature is 200°F.
- Transfer to wire rack and let cook for 10 mins.
