Banana Bread

Ingredients 

  • 1 1/2 cups Red Fife Multipurpose Flour
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 3/4 tsp ground cinnamon 
  • 3 medium overripe bananas, 1 1/2 cups mashed
  • 8 tbsp butter, melted and cooled
  • 3/4 cup light brown sugar
  • 2 large eggs at room temperature
  • 1 tsp vanilla extract 
  • 1 cup semi-sweet chocolate chips (can be omitted)

Directions

  1. Preheat oven to 350°F.
  2. Line your 8 1/2'' x 4 1/2'' loaf pan with parchment paper or grease with butter.
  3. Whisk the flour, baking soda, salt and cinnamon together and set aside.
  4. Use a fork to mash the bananas into a paste in a large bowl.
  5. Whisk the melted butter, brown sugar, eggs and vanilla into the banana until well blended.
  6. Using a rubber spatula, scrape the sides and bottom of the bowl. Add the dry ingredients, stirring the batter gently until the flour disappears. 
  7. Gently fold in chocolate chips.
  8. Pour batter into prepared loaf up to 3/4 full.
  9. Bake for 55 to 60 minutes at 350°F or until you can insert a thin knife or toothpick into the middle of your bread, and it comes out clean. You can also use a thermometer to check that the internal temperature is 200°F.
  10. Transfer to wire rack and let cook for 10 mins.
