If you have a few old bananas lying around, here is a quick and simple recipe that will have everyone drooling.
I made these with a peanut butter swirl, which can be omitted for anyone with allergies!

Dry Ingredients
- 1 cup Red Fife Multipurpose Flour
- ⅓ cup cocao powder
- 1 tsp baking soda
- ½ tsp salt
- ½ cup chocolate chips
- 3 over-ripe bananas mashed
- ½ cup pure maple syrup
- 1 egg
- 1 tsp vanilla extract
- ¼ cup oil mild-tasting oil- I used avocado
Step One
Preheat your oven to 350F. Prepare a muffin tray with liners and set it aside.
Step Two
In a bowl, mash 3 bananas. Add all your wet ingredients to the mashed bananas. Whisk together until incorporated.
Step Three
In a separate bowl, mix together your dry ingredients flour, cocoa powder, baking soda and salt.
Step Four
Add your dry ingredients to your wet ingredients. Mix until incorporated without over-mixing.
Step Five
Fold in ½ cup of chocolate chips. But honestly, chocolate should be measured with the heart.
Step Six
Add ¼ cup of your mix to a prepared muffin tray with muffin liners. If you do not have liners, grease your muffin tray thoroughly.
Step Seven
On top of each muffin, add a small 1tsp of natural peanut butter and swirl it into the top of the batter. I also like to add a few extra chocolate chips to the top of the muffins.
Step Eight
Bake at 350F for 20-25 mins
